Foxy's for New Years!

Where are you going to be for New Year's Eve? We're going to Foxy's! Foxy's is the Times Square of the British Virgin Islands. Their "Old Year's Party" is world renowned for ringing in the New Year. 

There's always special appearances by Foxy himself. Whether in Foxy's outback concert venue or beach front, there's always music, drinks and fun times flowing! Headliners and local area bands are featured to provide non-stop music from dusk til dawn.

News from the Spreader!

It's a birds-eye view from the spreader. What's a spreader? No, it's not what you use to put your butter on your toast! Defined by Wikipedia, a spreader is a spar on a sailboat used to deflect the shrouds to allow them to better support the mast. 


There are always a few questions that we are asked by both yacht industry professionals booking charters for us and our guests. The answers below will help you determine how we interact with our guests and fulfill their vacations. 



General yacht questions:
In a sentence or two, how  would you best describe your yacht to prospective clients?  What’s your specialty? 
     
In the years aboard Three Moons, we’ve described ourselves as a fun-loving service oriented professional sailing couple offering a touch of Southern hospitality fused with the spirit of Caribbean flair. 

What are the three biggest assets of your yacht? 
     Having four equal air-conditioned cabins is one of our biggest assets. Also important is the fact that the yacht is kept in Bristol condition at all times. It’s a real plus for the guest to know that when they return for their second charter, the yacht will look well kept, not worn out. Three Moons has won 10 Virgin Islands Charter Yacht League Culinary Competitions making us the only yacht in the area to win this many awards. Thirdly, and most importantly, we are an owner/operator Crew that has performed professionally, consistently and reliably on the same yacht for over a decade!

Do you have a favorite type of charter?  Several couples, one couple or families? 
     Over the years, this question has been asked many times. But honestly, we like the variety of both several couples and families. We don’t want to pin ourselves to one category. A variety of charters keep our jobs exciting!  

About what percentage of the time do you have several couples, one couple, or families? 
     60% couples and 40% families. Only twice in eight years have we had one couple onboard.

What percent of your yearly charters are repeats? Approximately 50-60%

What's New This Season?

The question most frequently asked this time of the year is, “What’s New This Season?” Some years, it’s all about the new toys like the Caribe 115hp Yamaha dinghy shown here.  Other years you have to pay attention to what makes our yacht a safe place to vacation! 



It’s that time of the year. Return to Three Moons yacht, grab the Finesse It and start polishing! Just like a home on the lake that’s unoccupied during the winter, our home is in a dusty boatyard in Virgin Gorda, British Virgin Islands for 3-4 months every year during hurricane season. And you can imagine, a huge amount of cleaning & polishing must be done before the guests arrive for holiday charters! It’s time to see what’s been fixed in order to have a carefree charter season! 
This year’s boatyard refit is more about the things you cannot see, rather than the things you can! Sure, we are replacing the carpet with plush new high quality Mohawk stain resistant carpet. And we even love the name of the color, “custard”! (Nothing wrong with anything named after a dessert!) 
But here’s our list of the really important stuff that’s been done to the yacht recently:

Great New Thanksgiving Dessert!

Layered Pumpkin Vanilla Rum Cheesecake ‘n Chocolate Pecan Pie

This decadent dessert began with a wonderful fall lunch on the patio at the Cheesecake Factory near Nashville, TN. We’ve always been fascinated with their desserts! On that day, we tried this amazing layered dessert which combined both of our favorite Thanksgiving desserts. 


Curious, I did a little research on the company and the history of how they make their famous desserts. Below is my version which incorporates the idea of using a few healthier alternatives. I love Stevia; but it can be hard to use in baking. Sun Crystals has combined stevia and real sugar which makes it similar to Splenda; but in my opinion, a much safer product to consume with fewer calories.  
Contact me if you would like this recipe. It’s too lengthy for this blog; but it’s very easy and basic. Plan on this dessert taking 2 days to make. Each recipe is equally good on their own. But combined...they’re amazing!

Celebrating Saint Ursula & Her 11,000 Virgins Today!

The British Virgin Islands has more holidays than just about anyone else. You can guarantee that all the beaches today a hopping with folks just having a good time & limin' in the sunshine!

We've been sailing in the U.S. & British Virgin Islands for almost two decades. Many times we've been asked about how Christopher Columbus
named the Virgin Islands during his second voyage in 1493. Below is a fascinating excerpt from Wikipedia...a story neither of us have ever heard!

St. Ursula was a Romano-British princess who, at the request of her father King Donaut of Dumnonia in south-west England, set sail to join her future husband, the pagan Governor Conan Meriadoc of Armorica (Brittany), along with 11,000 virginal handmaidens. However, a miraculous storm brought them over the sea in a single day to a Gaulish port, where Ursula declared that before her marriage she would undertake a pan-European pilgrimage. She headed for Rome, with her followers, and persuaded the Pope, Cyriacus (unknown in the pontifical records), and Sulpicius, Bishop of Ravenna, to join them. After setting out for Cologne, which was being besieged by Huns, all the virgins were beheaded in a dreadful massacre. The Huns' leader shot Ursula dead, supposedly in 383 (the date varies).

International Talk Like A Pirate Day!

Every once in awhile, some fun-loving soul comes along with an idea that is so original and new that your first reaction is, “Those folks should be on meds!”

International Talk Like a Pirate Day, held annually on Sept. 19th was originally created by John Baur & Mark Summers. (Why in the world didn’t we think of it first?) As the name suggests, whether you are in the “little latitudes” or not, you should be speaking like a pirate today. Is this a fun idea or what? 

Baur & Summers came up with the idea in 1995. The holiday came into being as a result of a racquetball injury! Even crazier, they decided to chose Summers’ ex-wife’s birthday for the day of celebration as it would be easy for him to remember! 

Enjoyed as an inside joke between two friends for years, the holiday gained exposure when syndicated columnist Dave Barry promoted the holiday in 2002. Check out the Miami Herald if you  would like to see the article as it was written by Barry. 

While Blackbeard & Anne Bonne may be our favorite pirates in the days of old, our personal favorite “pirate” of today’s world is Micheal Beans. Beans continues to entertain with a huge amount of energy and success in his efforts to improve the health, education & welfare of the underprivileged children of Ile LaVache in Haiti.

After 20+ separate charters yacht vacations each season, a charter crew needs a break…and they take one every Summer up until November 1st!

I let you know in past articles  that owning and operating a charter yacht vacation business is not just having fun and sailing around the Caribbean.  It is a BIG business.  It is BIG work!  And, it is not for the faint of heart!  Imagine owning a bed and breakfast in the Caribbean, except that it is a boat!  If something breaks there is no one to call except your personal skills in fixing it; generators, ice makers, electrical, plugged plumbing, air conditioning break downs, sheets and sail issues, and on and on.  Are you getting the picture that is not just sailing in Paradise and keeping sun screen on?  The “job” of a charter yacht owner/crew is to produce an extraordinary tropical yacht vacation experience for every guest…for every week of charters.  And, if that is not delivered to their charter guests they will not have a “Caribbean floating bed and breakfast” business for very long...

Get Your Mofongo On!

(Guess I got your attention didn’t I?)
It’s almost autumn and I am dreaming of foods that are my favorite for this time of the year. Southern-style cornbread dressing has always been at the top of my list for Thanksgiving. But this year as we celebrate having Thanksgiving with our family in TN, I am going to go “out of the box” and introduce everyone to mofongo! 
What is mofongo? Wikipedia defines it as ultimately of African origin and traced to both Puerto Rican & Dominican cuisine. You’ve seen those lonely looking green plantains at the grocery store and wondered what to do with them. Well I have the answer if you are looking for some down-home island style comfort food! Barring all carb-control, I think mofongo is a great replacement for mash potatoes, rice and other starchy side dishes. 
There are two things we have to have every season when we travel through Puerto Rico on our way to and from our charter yacht the British Virgin Islands: mojitos and mofongo! Ok, so maybe we have to have some tostones (fried plantains), rice & beans and lechon (whole roasted pig) too! Typically, mofongo is served in a tall wooden pestle style bowl. Delivered to your table, the mofongo ingredients are prepared and then mashed with mortar in a wooden bowl. 
Since I don’t have any tall wooden bowls, I like the adaptation of the recipe below:  
Plantain Mofongo 
Ingredients: 
2 green plantains
Vegetable oil for frying
1 tablespoon olive oil (not extra virgin)
2 cloves garlic
¼ teaspoon kosher salt
 ½ ounce bacon
2 teaspoon saffron broth
8 Jumbo Shrimp Peeled and Deveined

Procedure:
1. To make it easier to peel the plantains: Under running warm water and cut off ½ inch from both ends of the plantains. Using a sharp knife, score the skin lengthwise in three different sections. Slide the tip of the knife or your finger under the skin and begin to pull it away, going from top to bottom.
2. In a frying pan or deep fryer, heat about 2 inches of vegetable oil to 350º F. Cut the plantains into 1 inch pieces (or ½-inch for smaller tostones), and add to the hot oil. Fry for about 6 minutes until they start turning golden and are tender inside. Remove from the oil, and drain on paper towel.
3. Prepare the mofongo: Oil the inside of a deep wooden or glass bowl with the olive oil. Add the garlic and ¼ teaspoon of salt and, with a wooden spoon, pound the garlic to a paste. Add half of the fried plantains to the bowl and pound to a coarse mash, incorporating the garlic paste as you pound. Add the bacon, saffron broth and the remaining pieces of plantain. Season with 1/4 teaspoon of salt, and pound to mash the newly added plantain and incorporate the others ingredients. Rotate the bowl as you go, pounding with a downward motion toward the sides of the bowl. Once the mixture is mashed spoon it into a ramkin or 4oz bowls. After molding & smoothing out the surface, flip onto a plate. At this point the mofongo should look like a half dome.
4. Saute shrimp in a little oil or butter and cook until done place over the Mofongo and top with the saffron broth.
 Saffron Broth
 Ingredients:
2 cloves of garlic, 2 pinches of saffron, 1/4 C Unsalted Butter, 1 Cup organic chicken broth, Salt, Fresh green peas 
Procedure: 
1. Thinly slice 2 garlic cloves, while preheating sauté pan at medium temperature. Add butter and the garlic and bring up temperature to high. Sauté for a couple of minutes and add 1 cup of chicken broth, bring to a boil and add more butter until you have a nice and smooth consistency. Add 2 pinches of saffron , and salt to taste. Allow saffron to incorporate an even color by stirring lightly. Lastly add the peas and cook further a couple of minutes.
